BEST Sourdough Discard Chocolate Chip Cookies

These are THE BEST fluffiest cookies ever!

When you have some dourdough discard, here is a delicious way to use it!

This recipe is versatile in that fact that you can add flavorings and nuts if you choose!

Ingredients:

1 cup butter (browned)

1 cup brown sugar

1/4 cup white sugar

2 eggs

2/3 cup (140g) sourdough discard

1 1/2 tsp pure vanilla extract

1/4 tsp almond extract (optional but SO delicious)

1 tsp baking powder

3/4 tsp salt

2 1/2 cups unbleached all-purpose flour

1/4 cup quinoa flour (optional- can substitute for all-purpose flour)

You'll also need:

Baking Stone (or Baking sheet)

Stand Mixer

Ice Cream Scoop

Parchment Paper

 

Step 1: Place your mixing bowl in your freezer for now*(see below). This helps after step 2.  Pre-heat your oven to 350 degrees F.

*Only suggested if using a stainless steel mixing bowl, not glass.

Step 2: Brown you butter in a saucepan. This step is super easy, it just takes a few extra minutes. All you have to do it place you butter in a saucepan over medium heat, and stir conistently, until the milk solids seperate from the liquids. The liquids will also start to darken. This takes about 10 minutes. This is an optional step, but in my opinion, it makes the flavor all that much more decadent!

Step 3: Remove your mixing bowl from the freezer. Pour your browned butter into you cooled mixing bowl. Add you brown and white sugar, and your vanilla and almond extracts. With a stand mixer, mix on speed level 2/3 for about 1 minute.

Step 4: Add your eggs, and sourdough starter. Mix on medium speed for about 1 minute.

Step 5: Add your salt, baking powder and flours. Gradually add in the flour, mixing on a low speed. Mix just until all combined. Add your chocolate chips.

Step 6: Using a spoon (or my favorite, an ice-cream scoop), scoop your dough onto a stone or baking sheet lined with parchment paper.

Step 7: Bake for approximately 18 minutes. 

Step 8: Remove from oven and let rest for at least 5 minutes.
